Pancake / Flappy cake for breakfast

When I found a pancake recipe that works, I never bought a boxed pancake anymore. Its cheaper, my kids love it and the boys love making it…

Here are the ingredients:

1 cup flour

2 Tbsp sugar

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

Mix all dry ingredients and set aside.

1 cup buttermilk { Substitute: 3/4 cup full cream milk and 1 Tbsp vinegar}

1 egg

2 Tbsp melted butter 

Combine dry ingredients and wet ingredients. Mix until combined, don’t over mix. 

Add your favorites… My boys love chocolate chip, peanut butter and Oreo. You can definitely go for healthier options like banana, mango, peach or other fruits. You can also put oatmeal for more fiber.  There is no rule how you can make a good breakfast.. So be creative with it.

Emergency Preparedness kit

Earthquake, fire, tsunami, flood, typhoon or even a terrorist attack. We all need to be prepared from all these unpredictable circumstances. These gruelling events are in fact something that we cannot control, its written, all we can do is be prepared for any of these events. 

Its was 2 years ago when I attended a certification from Safety Organization of the Philippines (SOFI), a  training for Basic Occupational Safety and Health.  The talks about The Big One was already highlighted even before everyone was talking about it. The recent moving of the Earth plates are experienced around the country in numerous instances. I myself experienced the shake twice in 2 months.

When you are living with toddlers, it is almost obligatory to have an emergency plan prepared. Prayer is top on our list. We also have an emergency kit stored at the back of the main door, just in case anything happens. I suggest that everyone should have one in every household. Its better to be prepared than sorry. 

Here is the emergency kit we contiously build and keep adding little things from time to time. 

I will let you have a peak on what we have so far. It is stil work in progress.

  • Flashlight or torch
  • Paracord with flint
  • Whistle
  • Portable knife

For all battery operated gadget such flashlight, transistor radio. Batteries should be inside the gadget, just make sure its depolarised so the batteries will not get flat. 

  • Water
  • Instant noodles
  • Instant coffee
  • Canned goods (ginamit ko muna, pinangalmusal namin 🙂 )

Make sure the food and water are not expired. Yes, bottled water expires. 

Activity pack for kids. 

  • Crayons
  • Activity book
  • Coloring book
  • Toys

Photocopy of important documents

  • Birth certificates of all the members of the family
  • ID’s

I keep these documents in a zipper bag. 

  • Rope

You’ll never know when there is a need to rappel. Char! 

  • Plastic Raincoat or ponchos

This can serve as a mat if in case of evacuation or as a protective gear from rain.

First aid kit

  • Gauze pad

Devilled eggs

The most challenging part of the day is what to cook for toddlers with the list of considerations:

  • What would they eat?
  • What is fun to eat?
  • What can Diego eat, who has a G6PD condition?
  • What is healthy?
  • What is available in the cupboard and fridge?

Then you think for a second, I am left with very limited options. You’re resourcefulness and creativity comes in handy. 

In this recipe, I tweaked it a bit. The deviled eggs recipe calls for a mustard, but I didn’t have any and the kids probably wouldnt like it, as it is an acquired taste. I have an opened all purpose cream in the fridge and so I replaced it with than and it added creaminess to the yolks too. 

Here are the ingredients:

  • Eggs
  • Mayonnaise
  • All purpose cream
  • Nutmeg
  • Salt and pepper
  • Green onion leaves
  1. Boil eggs for at least 10 minutes or until hard boiled. Cool.
  2. Peel eggs and cut in half.

3. Remove yolks from egg whites.

4. Add in mayonnaise and cream.

5. Mix until creamy and lump free.

6. Add your seasoning and spices ; salt, pepper and nutmeg or paprika, nutmeg is all I have.

7. Mid until all incorporated. Taste. Adjust taste according to your desired taste.

8. Put in a piping bag or a ziplock bag and pipe the yolks on the egg whites.

9. Put a dash of nutmeg and green onion leaves on top. 

Lunch is ready. Go try it out. Its also great as appetizer. It can be served cold or warm.

(Super Mario) Diego’s 3up Birthday celebration

How to prepare for a birthday party for kids?

Here are some ideas how I achieved a birthday celebration for Diego’s 3rd birthday, on a budget.

Before we come up with Super Mario theme party, we had a long list of his favorites. Super Mario got shortlisted from Oddbods, angry birds, crayola, sago mini and a lot more.  It is important to identify your childs favorite so you would know where to start and for your child you are a super star.

TIME:  You can start searching for kids party ideas from #pinterest. I think that’s the best avenue to create your mood board. I got most of my ideas from pinterest. 

As soon as we pegged super Mario as the theme, I started collecting few things from hardware, bookstore and supermarket for things that would fit in the theme. For the super Mario theme, anything in red and green. 

I got this tissue paper and moustache topper for 30 pesos from a baking store. I used the moustache topper as a straw ornament. The table napkin are just gorge, isn’t it? 

These are local Goya bits I found in the supermarket. To mario-size it, I put stickers which I had printed out.

These are part of the loot bags, its egg shaped chocolate candy and called it yoshi eggs. 

These are some of my left over boxes for cupcakes where I put letters from a rubberized alphabet puzzle mat. Its the same rubberized mat that spells out HAPPY BIRTHDAY, as part of my back drop.

My  Toad pops {Mallow pops} holder is made of plastic gardening pot, then placed a styrofoam ball I cut in half. I glued in cupcake liners showing the colored part. For the pipe stand, these are cylinder chip containers I cut, glued and painted, to replicate PVC pipes.

We celebrated Diegos birthday a day after his birthday, so on the day i made these super Mario cupcakes, for him to blow, on the day of his birthday and a cake to blow on his party. ( below)

I had these hats made by a crafter friend, isn’t she Genius?

A minute made tetra pack juice and put super Mario stickers to personalize it.

The food:

Super Mario and Luigi’s characters are Italian nationals. So, we served Italian spaghetti

Activities

I set up an activity desk, where the kids can enjoy a Coloring station, I printed out super Mario coloring book pages and had some crayons set up. 

Then we had a yoshi egg hunt. I scattered these “yoshi eggs” around the house with a surprise inside the eggs.

There was also cupcake decorating station prepared but everyone was busy watching the ladies volleyball finals of Ateneo and DLSU. That saved a lot from entertainment. 

I doesn’t take big bucks to throw a special theme party for your kids. Just a little resourcefulness and creativity and viola!!! Diego felt it was special. Tomas is excited on his monster truck party on July. We were  grateful the kids enjoyed and I was humbled that the guests appreciated the effort I put in Diegos 3up party. 

Homeschool vs regular school

Nakakatakot pala yung thought na magpapaaral ka na. Especially if hindi ka prepared sa separation anxiety, financially and sa panibagong sistema na naman na kakaharapin mo sa araw araw. At the same time nakakaexcite din na mag shop for school. Nakakahappy malaman yung approach ng teaching nila, yung sasalubungin ka ng mga teachers with a big smile, very warm and welcoming talaga ang feeling. Pero nababasa ko yung speech bubble nila na ENROLLEE, PERA. Nakaka good vibes lang talaga yung amoy ng classrooms, yung amoy books and papers. It brings back good memories from when you were a kid. 

My husband and I were solid sa decision na gusto namin si Tomas and soon si Diego sa progressive school. Yung wholistic yung approach. Nung malaman namin ang presyo ng tuition fees ng progressive schools, our enthusiasm went down to zero. Nakakapanghina malaman na gagastos ka ng 80K-100K++ sa isang school year.. Kahit maglakad ako simula Apari hanggang Julo hindi ako gagastos ng 100K para sa tuition fee. I value and understand the worth of education, kung tutuusin mura pa nga magaral sa Pilipinas di ba? Kung wala ka naman panggastos bakit kelangan ipilit?

So we reassessed our options how we can give them a good education we can afford. After narrowing down our options we end up with homeschool. I researched, read reviews, watched videos regarding homeschool. SOLD! 

My husband and I talked about it. I discussed to him what got me to the idea of homeschooling. TIP: Importante na align kayo sa decision ng husband/partner. Kasi magiging katuwang mo sya sa pagtuturo and may support ka sa mga activities na gagagwin ninyo ni bagets.

Here are our buying points:

  • Progressive approach. Mai a-apply namin yung wholistic approach yung hindi lang  puro academics pero ma d-develop din ang multiple intelligence.
  • Financially friendly. Mas mura ang tuition fee compare sa regular school. Its cheaper by 70% as tuition fee alone. No additional expenses sa uniform, Baon, school bus, books etc.
  • Safety. It reduce the chances of risk ie, yung travel from school to home, yung na f-forsee na incident of big one and all relative circumstances.
  • Behavioural influences. Iba na ang mundo ngayon, kabi-kabila ang mga ganap sa paligid ligid ng puno ng linga. Mabilis sila maka adopt ng bad words. Yung mga attitude/behaviour na nakikita nila sa ibang bata sa school and environment mahirap i-control. Iba-iba ang pagpapalaki ng bawat family and this translates sa behaviour ng child na isa sa Pwedeng maka influence sa mga bagets natin.
  • A little less stressful. Di ko need mag wake up ng maaga to prepare baon. Less stress din si bagets sa pag gising ng maaga, maligo, magbyahe para hindi ma late sa school.

Syempre meron din’g downside but we also identified how we can turn that around. 

Here are the disadvantages and our work around.

  • Lack of social interaction: Tomas is currently doing Kumon, we decide to continue with the Kumon program, I g-gapang hanggat Kaya. This makes up for the interaction part. What I like about the institution for homeschool na napili namin, we can make an arrangement to join sa mga activities sa regular school and he can even sit in sa class. We can have him join sa P.E. class and sa ibat ibang activities sa school.
  • Parent hat – Teacher Hat: I admit. It will be a challenge for both of us sa pag shift between mum mode and teacher mode vice versa. Kaya simula ngayon nasa conditioning stage na kami if nag start na kami ng homeschool we will strictly follow a time table. We also try to make the house look/feel like a school. Paunti-unti nagdadagdag pagnakaka L-L (luwag luwag)

Sa ngayon 0 expectations pa kami. First time homeschooler and I’m very excited din.

Mahaba ang list namin ng institution na nag o-offer ng homeschool program na accredited ng DepEd. Pero nag shortlist kami and nagustuhan namin and na cover yung hinahanap namin with Homeschool of Asia world Inc., partner with New Era University for their deped accreditation needs.
