Pancake / Flappy cake for breakfast

When I found a pancake recipe that works, I never bought a boxed pancake anymore. Its cheaper, my kids love it and the boys love making it…

Here are the ingredients:

1 cup flour

2 Tbsp sugar

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

Mix all dry ingredients and set aside.

1 cup buttermilk { Substitute: 3/4 cup full cream milk and 1 Tbsp vinegar}

1 egg

2 Tbsp melted butter 

Combine dry ingredients and wet ingredients. Mix until combined, don’t over mix. 

Add your favorites… My boys love chocolate chip, peanut butter and Oreo. You can definitely go for healthier options like banana, mango, peach or other fruits. You can also put oatmeal for more fiber.  There is no rule how you can make a good breakfast.. So be creative with it.

Lack of storage and too many spices {DIY}

Let me share with you my space saver tip to store spices when spice rack cannot afford to house them anymore or if you do not have a spice rack to store them.

I keep all jars from fruit preserves, peanut butter, sardines and wash them clean.

I label with stickers like these: 

Stick Velcro tape on the lid and shelf. 

… a happy momma I was… Spices stored fresh and  functional.

Go ahead try it… Its one of my favorite diy to date…

BOBA Milk Tea

BOBA milk tea, Bubble tea, Pearl tea, tapioca tea… Whatever its called… I like it!

When you’re craving for something you itch for days but you’re at you’re wits end because getting out of the house is just impossible, especially if your stuck with toddlers. You finally get your pantry cleaned and hoping very hard you have tapioca balls and condensed milk hiding somewhere. The feeling of having these 2 things you’ve been looking for showed up,  gave you the clear definition of hope for this day. Then, you realized that tapioca balls take forever cook. You just drool with anticipation. 

Here’s how I made my version of tiny BOBA tea

The ingredients:

Sago or tapioca balls (I had small sago in my pantry, so this is what I used) BOBA tea, uses Big sago, black pearl.

Tea bag of your choice.  These hibiscus tea were given by  a great friend. Smells soooo good too.

Sweetened condensed milk

Procedure:

Cook tapioca balls by boiling in water until translucent. Drain and set aside.

Steep 2 bags of tea in a water.

Pour condensed milk in a glass

Pour tea in a glass over condensed milk.

Stir tea and milk together. Then add tapioca balls. 

Can serve hot or cold.. 

I like mine cold…  🙂 so I filled mine with ice cubes..

… With these 3 ingredients you will be surprised how much joy it brings. Definitely deserve the #cravingsatisfied hashtag as the tapioca balls whirl inside your mouth as you sip and that sweet milky refreshing tea goes down your throat. If this is not refreshing, then I don’t know what is…

Devilled eggs

The most challenging part of the day is what to cook for toddlers with the list of considerations:

  • What would they eat?
  • What is fun to eat?
  • What can Diego eat, who has a G6PD condition?
  • What is healthy?
  • What is available in the cupboard and fridge?

Then you think for a second, I am left with very limited options. You’re resourcefulness and creativity comes in handy. 

In this recipe, I tweaked it a bit. The deviled eggs recipe calls for a mustard, but I didn’t have any and the kids probably wouldnt like it, as it is an acquired taste. I have an opened all purpose cream in the fridge and so I replaced it with than and it added creaminess to the yolks too. 

Here are the ingredients:

  • Eggs
  • Mayonnaise
  • All purpose cream
  • Nutmeg
  • Salt and pepper
  • Green onion leaves
  1. Boil eggs for at least 10 minutes or until hard boiled. Cool.
  2. Peel eggs and cut in half.

3. Remove yolks from egg whites.

4. Add in mayonnaise and cream.

5. Mix until creamy and lump free.

6. Add your seasoning and spices ; salt, pepper and nutmeg or paprika, nutmeg is all I have.

7. Mid until all incorporated. Taste. Adjust taste according to your desired taste.

8. Put in a piping bag or a ziplock bag and pipe the yolks on the egg whites.

9. Put a dash of nutmeg and green onion leaves on top. 

Lunch is ready. Go try it out. Its also great as appetizer. It can be served cold or warm.

Spicy Tuna salad sandwich in a Red Plum Bread

Ingredients: 

  • Any preferred bread
  • Tuna spread
  • Butter
  • Cheese
  • Lettuce 
  • Tomato
  • Caramelized onion
  • Egg

In this recipe I used red plum loaf. I make my own bread. I had some dried red plum sitting in the fridge, it was a pasalubong from china and dont know how to use it I am not fan of dried fruits as well. I kept it, because I’m sure its going to come in handy in the future.. Taahhdahhh!!! I works great on bread. I will start selling fresh bread too, and will be available in Cupcakes, Cookies & Pies. 

Cut bread in half and pull the inside of the bread, so it can fit in with good and healthy veggies. 

 

Spread butter on both sides of the bread

Put cheese at bottom side of the bread. I used mozzarella, or you can put any cheese that melts. The cheese will also serve as a dam to seal the bottom of the bread to avoid spillage.

Put in fried eggs. Just simple scrambled eggs seasoned with salt.

Put caramelized onions. I sautéed sliced onions and honey, you can put sugar in replacement of honey.

Place tomatoes and lettuce on top.

Then slap on your tuna spread

For tuna spread:

I mixed together, canned tuna, mayonnaise, bit of condensed milk, bit of all purpose cream, minced (green finger chilies)  siling haba chilies ; seeds removed, salt and pepper.

You can add more on your sandwich, these are just some ingredients I have in my fridge. You can replace tuna with chicken. You can ommit the chilies so you can feed this to you children.

This can be a good baon idea for work or for kids to bring to work/school. Healthy and very filling.

Omelette cups {Cooking} 

Here are the ingredients:

-salt and pepper

I  don’t have exact measurements for the ingredients. I used whatever I have in the fridge. The recipe yields: 12 cups. 

Procedure:

1. Line muffin tins with wanton wrapper.

2. Beat eggs

3. Add all ingredients.

4. Set aside some cheese to sprinkle on top.

5. Add salt and pepper according to taste. Consider that cheese  can already be salty. 

6. Place egg mixture in wanton cups.

7. Sprinkle cheese on top 

8. Bake at 300° for 15 mins.
