Pancake / Flappy cake for breakfast

When I found a pancake recipe that works, I never bought a boxed pancake anymore. Its cheaper, my kids love it and the boys love making it…

Here are the ingredients:

1 cup flour

2 Tbsp sugar

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

Mix all dry ingredients and set aside.

1 cup buttermilk { Substitute: 3/4 cup full cream milk and 1 Tbsp vinegar}

1 egg

2 Tbsp melted butter 

Combine dry ingredients and wet ingredients. Mix until combined, don’t over mix. 

Add your favorites… My boys love chocolate chip, peanut butter and Oreo. You can definitely go for healthier options like banana, mango, peach or other fruits. You can also put oatmeal for more fiber.  There is no rule how you can make a good breakfast.. So be creative with it.

Emergency Preparedness kit

Earthquake, fire, tsunami, flood, typhoon or even a terrorist attack. We all need to be prepared from all these unpredictable circumstances. These gruelling events are in fact something that we cannot control, its written, all we can do is be prepared for any of these events. 

Its was 2 years ago when I attended a certification from Safety Organization of the Philippines (SOFI), a  training for Basic Occupational Safety and Health.  The talks about The Big One was already highlighted even before everyone was talking about it. The recent moving of the Earth plates are experienced around the country in numerous instances. I myself experienced the shake twice in 2 months.

When you are living with toddlers, it is almost obligatory to have an emergency plan prepared. Prayer is top on our list. We also have an emergency kit stored at the back of the main door, just in case anything happens. I suggest that everyone should have one in every household. Its better to be prepared than sorry. 

Here is the emergency kit we contiously build and keep adding little things from time to time. 

I will let you have a peak on what we have so far. It is stil work in progress.

  • Flashlight or torch
  • Paracord with flint
  • Whistle
  • Portable knife

For all battery operated gadget such flashlight, transistor radio. Batteries should be inside the gadget, just make sure its depolarised so the batteries will not get flat. 

  • Water
  • Instant noodles
  • Instant coffee
  • Canned goods (ginamit ko muna, pinangalmusal namin 🙂 )

Make sure the food and water are not expired. Yes, bottled water expires. 

Activity pack for kids.

  • Birth certificates of all the members of the family

I keep these documents in a zipper bag.

Lack of storage and too many spices {DIY}

Let me share with you my space saver tip to store spices when spice rack cannot afford to house them anymore or if you do not have a spice rack to store them.

I keep all jars from fruit preserves, peanut butter, sardines and wash them clean.

I label with stickers like these: 

Stick Velcro tape on the lid and shelf. 

… a happy momma I was… Spices stored fresh and  functional.

Go ahead try it… Its one of my favorite diy to date…

BOBA Milk Tea

BOBA milk tea, Bubble tea, Pearl tea, tapioca tea… Whatever its called… I like it!

When you’re craving for something you itch for days but you’re at you’re wits end because getting out of the house is just impossible, especially if your stuck with toddlers. You finally get your pantry cleaned and hoping very hard you have tapioca balls and condensed milk hiding somewhere. The feeling of having these 2 things you’ve been looking for showed up,  gave you the clear definition of hope for this day. Then, you realized that tapioca balls take forever cook. You just drool with anticipation. 

Here’s how I made my version of tiny BOBA tea

The ingredients:

Sago or tapioca balls (I had small sago in my pantry, so this is what I used) BOBA tea, uses Big sago, black pearl.

Tea bag of your choice.  These hibiscus tea were given by  a great friend. Smells soooo good too.

Sweetened condensed milk

Procedure:

Cook tapioca balls by boiling in water until translucent. Drain and set aside.

Steep 2 bags of tea in a water.

Pour condensed milk in a glass

Pour tea in a glass over condensed milk.

Stir tea and milk together. Then add tapioca balls. 

Can serve hot or cold.. 

I like mine cold…  🙂 so I filled mine with ice cubes..

… With these 3 ingredients you will be surprised how much joy it brings. Definitely deserve the #cravingsatisfied hashtag as the tapioca balls whirl inside your mouth as you sip and that sweet milky refreshing tea goes down your throat. If this is not refreshing, then I don’t know what is…

Devilled eggs

The most challenging part of the day is what to cook for toddlers with the list of considerations:

  • What would they eat?
  • What is fun to eat?
  • What can Diego eat, who has a G6PD condition?
  • What is healthy?
  • What is available in the cupboard and fridge?

Then you think for a second, I am left with very limited options. You’re resourcefulness and creativity comes in handy. 

In this recipe, I tweaked it a bit. The deviled eggs recipe calls for a mustard, but I didn’t have any and the kids probably wouldnt like it, as it is an acquired taste. I have an opened all purpose cream in the fridge and so I replaced it with than and it added creaminess to the yolks too. 

Here are the ingredients:

  • Eggs
  • Mayonnaise
  • All purpose cream
  • Nutmeg
  • Salt and pepper
  • Green onion leaves
  1. Boil eggs for at least 10 minutes or until hard boiled. Cool.
  2. Peel eggs and cut in half.

3. Remove yolks from egg whites.

4. Add in mayonnaise and cream.

5. Mix until creamy and lump free.

6. Add your seasoning and spices ; salt, pepper and nutmeg or paprika, nutmeg is all I have.

7. Mid until all incorporated. Taste. Adjust taste according to your desired taste.

8. Put in a piping bag or a ziplock bag and pipe the yolks on the egg whites.

9. Put a dash of nutmeg and green onion leaves on top. 

Lunch is ready. Go try it out. Its also great as appetizer. It can be served cold or warm.

(Super Mario) Diego’s 3up Birthday celebration

How to prepare for a birthday party for kids?

Here are some ideas how I achieved a birthday celebration for Diego’s 3rd birthday, on a budget.

Before we come up with Super Mario theme party, we had a long list of his favorites. Super Mario got shortlisted from Oddbods, angry birds, crayola, sago mini and a lot more.  It is important to identify your childs favorite so you would know where to start and for your child you are a super star.

TIME:  You can start searching for kids party ideas from #pinterest. I think that’s the best avenue to create your mood board. I got most of my ideas from pinterest. 

As soon as we pegged super Mario as the theme, I started collecting few things from hardware, bookstore and supermarket for things that would fit in the theme. For the super Mario theme, anything in red and green. 

I got this tissue paper and moustache topper for 30 pesos from a baking store. I used the moustache topper as a straw ornament. The table napkin are just gorge, isn’t it? 

These are local Goya bits I found in the supermarket. To mario-size it, I put stickers which I had printed out.

These are part of the loot bags, its egg shaped chocolate candy and called it yoshi eggs. 

These are some of my left over boxes for cupcakes where I put letters from a rubberized alphabet puzzle mat. Its the same rubberized mat that spells out HAPPY BIRTHDAY, as part of my back drop.

My  Toad pops {Mallow pops} holder is made of plastic gardening pot, then placed a styrofoam ball I cut in half. I glued in cupcake liners showing the colored part. For the pipe stand, these are cylinder chip containers I cut, glued and painted, to replicate PVC pipes.

We celebrated Diegos birthday a day after his birthday, so on the day i made these super Mario cupcakes, for him to blow, on the day of his birthday and a cake to blow on his party. ( below)

I had these hats made by a crafter friend, isn’t she Genius?

A minute made tetra pack juice and put super Mario stickers to personalize it.

Power star And toadstool sugar cookies which I  baked.

The food:

Super Mario and Luigi’s characters are Italian nationals. So, we served Italian spaghetti

Cupcake tower has red and green cupcakes, I made red velvet and matcha cupcakes with creamcheese frosting.

Activities

I set up an activity desk, where the kids can enjoy a Coloring station, I printed out super Mario coloring book pages and had some crayons set up. 

Then we had a yoshi egg hunt. I scattered these “yoshi eggs” around the house with a surprise inside the eggs.

There was also cupcake decorating station prepared but everyone was busy watching the ladies volleyball finals of Ateneo and DLSU. That saved a lot from entertainment. 

I doesn’t take big bucks to throw a special theme party for your kids. Just a little resourcefulness and creativity and viola!!! Diego felt it was special. Tomas is excited on his monster truck party on July. We were  grateful the kids enjoyed and I was humbled that the guests appreciated the effort I put in Diegos 3up party. 

Spicy Tuna salad sandwich in a Red Plum Bread

Ingredients: 

  • Any preferred bread
  • Tuna spread
  • Butter
  • Cheese
  • Lettuce 
  • Tomato
  • Caramelized onion
  • Egg

In this recipe I used red plum loaf. I make my own bread. I had some dried red plum sitting in the fridge, it was a pasalubong from china and dont know how to use it I am not fan of dried fruits as well. I kept it, because I’m sure its going to come in handy in the future.. Taahhdahhh!!! I works great on bread. I will start selling fresh bread too, and will be available in Cupcakes, Cookies & Pies. 

Cut bread in half and pull the inside of the bread, so it can fit in with good and healthy veggies. 

 

Spread butter on both sides of the bread

Put cheese at bottom side of the bread. I used mozzarella, or you can put any cheese that melts. The cheese will also serve as a dam to seal the bottom of the bread to avoid spillage.

Put in fried eggs. Just simple scrambled eggs seasoned with salt.

Put caramelized onions. I sautéed sliced onions and honey, you can put sugar in replacement of honey.

Place tomatoes and lettuce on top.

Then slap on your tuna spread

For tuna spread:

I mixed together, canned tuna, mayonnaise, bit of condensed milk, bit of all purpose cream, minced (green finger chilies)  siling haba chilies ; seeds removed, salt and pepper.

You can add more on your sandwich, these are just some ingredients I have in my fridge. You can replace tuna with chicken. You can ommit the chilies so you can feed this to you children.

This can be a good baon idea for work or for kids to bring to work/school. Healthy and very filling.

Happy Mother’s Day sa lahat ng dakilang Ina sa buong mundo.

…sa taong ibibigay at gagawin ang lahat para sa kanyang pamilya. HAPPY MOTHERS DAY PO.

Walang iisang salita ang sapat para ilarawan ang isang INA. Walang anumang katumbas ang pagmamahal na kayang ibigay sa kanyang pamilya. Minsan nga kulang pa para itira para sa kanya. Kahit pagod, puyat, may dinaramdam, malungkot, meron pa ding masarap na pagkain sa hapag kainan, may malinis na bahay na pagpapahingahan, malinis na damit na susuotin, tubig na iinumin.. Hindi nagsasawang kayo ay pagsilbihan, pero kelangan ba tuwing Mothers Day lang sila pasalamatan?

Lahat ng hirap at sakit ng pagiging INA naranasan ko noong tumigil ako sa pagt-trabaho.  Una kang babangon huli kang matutulog, hindi maubos ubos ang gagawin sa buong maghapon. Kahit paulit ulit mong ginagawa araw araw, bakit Hindi ba masanay sanay ang katawan mo sa gawaing bahay. Paglubog ng araw, busog na ang lahat, mahimbing na natutulog. Ikaw? Nagliligpit at naglilinis pa din.  Sa 3 beses mong nagluto sa buong maghapon, isang beses kang nakakakain, madalas malamig na ulam at kanin pa.

Hindi totoo na ang mga nanay ay SUPER HEROS. Kasi napapagod din sila, nasasaktan, nahihirpan at higit sa lahat naghahanap din sila ng magmamahal at magaalaga sa kanila.

Sana maiisip ng lahat na hindi job description ng nanay ang pagsilbihan kayo. Ginagawa nya ang lahat lahat para sa pamilya kasi selfless sya. Kasi mahal nya kayo. Kasi gusto nya maayos kayo lahat. Kasi gagawin nya ang lahat maging masaya lang kayo.

Sana sa mga anak magkaroon kayo ng conscious effort na i-hug ang mga nanay nyo, pasalamatan sila pag tapos ng buong maghapon. Hindi Nyo man naiintindihan ang pinagdadaan nila. Kahit siguro half meant. Aapaw sa tuwa ang puso nila. Bigyan Nyo sila ng inspirasyon na pagsilbihan kayo. Bigyan Nyo sila ng lakas na ipagpatuloy ang ginagawa nila na masaya. Learn to appreciate the extra ordinary things that they do.

Mum, sorry, kasi sa Hindi ko nagawa na I hug Ka and pasalamatan Ka everyday the day ends. Sorry, Hindi ko na appreciate yung mga ginagawa mo sa amin sa araw araw. THANK YOU. I hope its not too late to give thanks to you for what you have done to us. Thank for everyday when we were growing up. Salamat kasi kahit may sarisarili na kaming buhay Hindi pa din nauubos yung love mo sa amin. Salamat kasi handa Ka pa din gawin ang lahat para amin.

I Love You.

Sa mga anak ko at sa asawa ko, pasensya na kayo kung nabigo ko kayo, kasi Hindi ako si wonder woman. Napapagod din ako. Kaya pasensya na kayo kung lagi akong masungit, Kung lagi akong galit, kung lagi akong sumisigaw. Pero Hindi ako titigil pagsilbihan kayo kahit 3 muscles nalang ang Kaya Kong ikilos, mabigay ko lang kung what you deserve for making me the best mum I could possibly be.

To my kids, thank you, for giving me the most prestigious title I could ever have. Because your birth made me become ME.

SPAM MUSUBI & KANI MAKI {cooking}

Going Japanese… Kawaii!!

Like baking, I do not have any formal training in a cold kitchen of a Japanese restaurant.  I barely been in one. I seldom go to a Japanese restaurant, because I can not afford it. Just like any sushi and Maki enthusiast, I love Japanese food. So I learn to make it. I understood why it is so expensive. Its labor intensive and the ingredients are expensive. Japanese food translates to their culture, very patient and very keen to details.

I would like to share to you how it is done, homemade style.

Here are the ingredients:

Japanese, like us Filipinos, rice is a staple, though they cook it differently.

How to make Japanese rice

-Japanese rice, I used Japonica or any short grain rice.

-Sake 

-sugar

-salt

In a bowl: combine sake, sugar and salt. Whisk until sugar and salt are dissolved completely.

Once dissolved, slowly add the sake mixture to the slightly cooled rice while mixing it thoroughly and fanning to cool.

Set aside.

SPAM MUSUBI

  • Spam
  • Tamago (egg roll)
  • Japanese style mayonnaise, I used Kewpie brand
  • Nori
  1. Fry spam. 
  2. Prepare tamago (parang scrambled eggs lang na may konting sugar, water and sake)
  3. Cut nori to strips.

To assemble.

Shape rice into slightly oblong. Since I seldom make Maki din, Hindi pa ako nag i-invest sa gamit. So I use plastic wrap lang. I shape the rice accordingly and wring the plastic wrap tightly para packed yung rice. I works naman without the fancy tools. 


Put a Japanese mayonnaise on top of the rice

Place the tamago on top. The mayonnaise will also serve as glue to keep it intact.

Place the spam on top

Bind the rice, tamago and spam with nori strips.

Kani Maki

  •  Japanese rice
  • Japanese style mayonnaise
  • Kani (crab stick), cut into strips
  • Assortment of different things you like in your Maki. 

  You can put ripe mangoes para California maki or avocado para tex-mex naman. Your preference ng gusto Nyo ilagay.

In this recipe: I used cucumber cut into strips, lettuce and kani. 

To assemble:

Place the shinny side of nori facing the sushi mat. Leaving an inch away from the edge of nori, place japanese rice across the nori.

Put a Japanese mayonnaise along the rice.

Assemble the ingredients 

Roll the mat away from you to wrap the stuffings, pulling it towards you from time to time to tighten the Maki.

Using a sharp knife cut the Maki in half then in 1/4 until to its desired size. 

Serve with soy sauce and wasabi.

Try rolling your own Maki and enjoy a generous serving at home for a price of 6 pieces of Maki from a ccommercial Japanese restaurant.
